I’m NOT a food blogger, I don’t even like to cook. But I saw a picture of these cookies on Pinterest and had to make them. And I’m so happy I did because they’re DELICIOUS!!  They’re so good I had to share for anyone that likes oatmeal cream pies. They are better than Little Debbie’s in my opinion!  

Tip: don’t make them the night before a snow storm unless you want to eat half the batch in the same day… I have no self control with sweets

I changed my cream filling to be a cream cheese frosting instead of the cream filling in the recipe.  If you’re not a fan of cream cheese frosting, I suggest following recipe linked. If you are a cream cheese frosting lover, follow the recipe below!!

Ingredients:

Instructions:

  • Cookies
    • Preheat oven to 350 degrees
    • Cream together butter and brown sugar
    • Add eggs & vanilla and whip on medium for 45 seconds
    • Combine all dry ingredients in separate bowl
    • Set mixer to low and add dry ingredients 1/2 cup at a time 
    • Roll dough into 2 inch balls and place on silicone lined baking sheet 2 to 3 inches apart 
    • Bake for 10 minutes
    • Edges should be slightly brown 
    • Cool on baking sheet
  • Filling:
    • Whip butter and cream cheese together on medium speed for 45 seconds
    • Add vanilla, milk, lemon juice
    • Change speed to low and add powdered sugar 1/2 cup at a time

Assemble the cookie sandwiches & Enjoy!

Tip: these are the best on day 2 or a few hours after sitting in an air tight container
