I’m NOT a food blogger, I don’t even like to cook. But I saw a picture of these cookies on Pinterest and had to make them. And I’m so happy I did because they’re DELICIOUS!! They’re so good I had to share for anyone that likes oatmeal cream pies. They are better than Little Debbie’s in my opinion!
Tip: don’t make them the night before a snow storm unless you want to eat half the batch in the same day… I have no self control with sweets

I changed my cream filling to be a cream cheese frosting instead of the cream filling in the recipe. If you’re not a fan of cream cheese frosting, I suggest following recipe linked. If you are a cream cheese frosting lover, follow the recipe below!!
Ingredients:

- Cookies:
- 1 1/2 C brown sugar
- 1 C room temperature butter
- 2 eggs
- 1/2 tsp cinnamon
- 1 T Vanilla
- favorite vanilla linked here. Organic and alcohol free, perfect for no bake recipes like the frosting used in this recipe
- 1 3/4 C gluten free all purpose flour
- 3/4 C almond flour
- 2 1/2 C gluten free oats
- 1 tsp baking soda
- 1 tsp baking powder
- Filling:
- 4 oz. room temperature butter
- 4 oz. cream cheese (half a block of cream cheese)
- 2 1/2 C powdered sugar
- 1/2 T vanilla
- 1 T milk
- Squeeze of fresh lemon juice
Instructions:
- Cookies
- Preheat oven to 350 degrees
- Cream together butter and brown sugar
- Add eggs & vanilla and whip on medium for 45 seconds
- Combine all dry ingredients in separate bowl
- Set mixer to low and add dry ingredients 1/2 cup at a time
- Roll dough into 2 inch balls and place on silicone lined baking sheet 2 to 3 inches apart
- Bake for 10 minutes
- Edges should be slightly brown
- Cool on baking sheet
- Filling:
- Whip butter and cream cheese together on medium speed for 45 seconds
- Add vanilla, milk, lemon juice
- Change speed to low and add powdered sugar 1/2 cup at a time
Assemble the cookie sandwiches & Enjoy!
Tip: these are the best on day 2 or a few hours after sitting in an air tight container
